Santa Clarita is a merger of Valencia, Newhall, Saugus and Canyon Country, and each built out in a different decade. Newhall holds the oldest housing stock in the valley. That is where you find compact galley kitchens, raised foundations, and cabinetry built in place instead of installed as boxes. Saugus and Canyon Country filled in heavily through the 1970s and 1980s, with tract plans that put a dropped soffit over the upper cabinets and a load bearing wall between the kitchen and the family room. Valencia village plans are newer and repeat within a village, though they vary sharply from one village to the next.
So the same request, opening the kitchen to the living space, is a different job in each of them. In one house that wall comes out with a flush beam and no change to the roof line. In another it carries a second story, and the work needs a beam, posts down to new footings, and an engineer's stamp on the plan. You should know which one you have before you design a layout around it.
Permits run through the City, not the County
Inside city limits, kitchen permits go through the City of Santa Clarita building division. That is a different counter from Los Angeles County Building and Safety, which handles the unincorporated areas next door: Castaic, Stevenson Ranch and Val Verde. It surprises people, because a neighbor a few minutes up the road may have gone through a completely different process on a similar project.
Your records are split the same way. Anything permitted before the city incorporated in 1987 was filed with the County, so the history of an older Newhall or Canyon Country house may not sit where you expect. We do that research while scoping, not in the middle of a job.

Can the wall between my kitchen and family room come out?
Often, though the answer belongs to your specific plan. A lot of Saugus and Canyon Country tract houses put a bearing wall on exactly that line, carrying either roof framing or a second story above it. When it does carry load, the job needs a properly sized beam, posts brought down to adequate footings, and in most cases an engineer's calculation submitted with the permit. When it does not, the wall comes out with a flush beam and nothing above changes. Those are very different projects and very different numbers, so we settle it on the walk. Designing a layout first and asking afterward is how people end up attached to a kitchen they cannot build.
Why do older Santa Clarita kitchens have that boxed soffit above the cabinets?
Tract building convention from the years when much of Saugus and Canyon Country went up. The soffit hid ductwork, plumbing or wiring, and it let the builder use shorter stock cabinets. Frequently not without work. A current kitchen wants separate small appliance circuits plus dedicated circuits for the dishwasher and the disposal. Can I add an island to a tract kitchen in Saugus or Canyon Country?
Usually. The constraint sits below the floor instead of above it. An island sink or dishwasher needs drain and vent routed out to it. On a slab on grade house that means cutting the concrete, trenching, and patching before the finished floor goes down. On a raised foundation the same work happens in the crawl space for a fraction as much. Your foundation type and where the existing drain runs decide the number, so we locate both before you settle on the layout.
How does the summer heat here affect a kitchen project?
Mostly through materials and scheduling. Solid wood cabinetry and some flooring have to acclimate to interior conditions before installation, and adhesives and finishes have temperature ranges they need to cure within. Crews also slow down in a house standing open in peak heat. The schedule accounts for that instead of promising a summer week that does not exist.
Do the Santa Ana winds affect kitchen demolition?
They affect dust control. Containment that holds fine on a still day does not hold when a wind event comes through the valley and the house is open. We seal the work zone, run negative air where the scope calls for it, and move which days the exterior walls come open. A scheduling detail, not a reason to delay a project.

It stays on for most of the project. Can you match cabinetry in a home where only part of the kitchen is changing?
Sometimes. When the answer is no, you hear it before you commit and not after the boxes arrive. Can the kitchen stay usable during the remodel?
The kitchen itself, no. The disruption is manageable if it is planned, which mostly means setting up a temporary prep area elsewhere in the house, keeping the refrigerator on a working circuit, and having the long lead items on site before demolition starts. Most of the horror stories are a sequencing failure, not a construction one. A crew opens the kitchen, the cabinets turn out to be eight weeks away, and a family cooks on a hot plate through all eight of them. We order first and demolish second, so the room is only out of service while work is actually happening in it.
Do you work in the hillside neighborhoods on the valley edges?
Yes. On a hillside lot the difference is access, not the kitchen work. Narrow driveways, steep approaches and limited street frontage change where the dumpster goes, how material reaches the door, and how many crew vehicles fit on site. We walk that route during the estimate, because it is what makes the schedule real.
